Herbal Pate De Fruit Recipe

Pate De Fruit is a gummy like French fruit candy, traditionally made with pureed fruits mixed with pectin and sugar.

I’m always looking for ways to layer in more herbal medicine into my family’s day to day.

This recipe offers immune system strengthening botanicals in a delicious, fancy and downright adorable form.

This recipe can be tweaked to your taste, and is a great basic recipe for many different variations.

 

Ingredients:

¾  cup dried Goji Berries

¾ cup dried Rosehips (without seeds)

¼ cup dry or ½ cup fresh Elderberries

Small osha root (thumb size, you can hit with a hammer to break up the fibers) 

1 Lemon

1 ½ cup sugar

½ cup sugar for dusting

1 tablespoon pectin

2 cups water

Optional: 1 teaspoon citric acid (if you want a sweet/sour coating)


Silicon mold or a lightly greased (with a neutral cooking oil) loaf pan. 


Step 1: 

Pour enough hot water over goji berries and rosehips to re-hydrate them, set aside


Step 2:

Combine osha root and elderberries in a pot and add 2 cups of water. Simmer for 20 minutes, until slightly reduced.


Step 3:

Strain osha and elderberry tea and add tea to the goji berry and rosehips. 


Step 4:

Blend herbal mixture until smooth.This should yield about 2 cups of plant puree. 


Step 5:

Mix pectin into sugar


Step 6:

Heat plant puree until simmering and add the juice of one lemon. Add sugar and pectin mix and bring to a boil, stirring constantly. You’ll need to mix and cook this for about 8 minutes. The texture will begin to thicken. While still hot, pour quickly into your mold and spread evenly. Let the mixture cool completely. 


 

Once cooled, pop out of the mold and cut into small squares. Drop squares into the sugar mixture to coat them. Voila! Herbal Pate De Fruits! Store in the fridge for up to a month.
